Our entire range of cognacs is distilled respecting the traditional Charentais method of double distillation.
In order to infuse our eaux-de-vie with even more "bouquet", we let the wine settle before fermentation, enabling us to distill the lees which rest of the bottom of the vats during. alcoholic fermentation.
This method bestows our cognac with a very aromatic character.
Time
The aging of all of our Cognac takes place in oak barrels originated from the Limousin region of France.
After a few years in their casks, the eaux-de-vie become marked by the distinctive wood tannins doting the Cognac with its pleasant vanilla flavor. The nose and palate of the older Cognacs are richened with aromas of prunes, apricots, or cigar boxes...
